Sasa Sushi
If it's local cuisine from the Hokushin region, it's got to be "Sasa Sushi"
Sasa Sushi introduction
Sasa Sushi (笹寿司, Sasa zushi) is a type of sushi from the Hokushinetsu region, featuring vinegared rice and toppings wrapped in the leaves of the Kumazasa bamboo. In Niigata Prefecture, Sasa Sushi is often prepared by placing vinegared rice on a fresh Kumazasa leaf, topped with seasonal local vegetables, garnishes, and other ingredients. This gives the dish a wonderful seasonal flair and highlights fresh, regional produce. It is said that its origins trace back to the Sengoku period when Uesugi Kenshin's troops served rice on bamboo leaves as makeshift plates while stationed deep in the mountains during battles against Takeda Shingen.
