Sasazushi is a type of sushi in which sushi rice and sushi seeds are wrapped in kumazasa leaves, and is a local dish handed down in the Hokushinetsu region. Sasa sushi made in Niigata prefecture is a dish filled with sushi rice on top of bear bamboo leaves and topped with ingredients and condiments. It is a dish full of seasonal sensations using locally grown vegetables. It is said that it originated from the fact that Uesugi Kenshin's army put rice on bamboo instead of a vessel deep in the mountains during the war against Takeda Shingen during the Sengoku period.
