About Funankogui
Funankogui (ふなんこぐい) is a cherished dish from the Saga Plain, where a network of waterways has long supported an abundant population of crucian carp. This unique dish involves wrapping live-caught crucian carp in kombu seaweed and simmering it for hours with vegetables like daikon radish and lotus root in a flavorful mixture of miso and malt syrup.
The slow cooking process makes the fish tender enough to eat even the bones, resulting in a comforting homemade meal that is an essential taste of Saga's autumn and winter seasons. With its distinct flavor and lack of fishy odor, Funankogui remains a beloved local delicacy.
