About Kobuzushi
Kobuzushi(こぶずし) is a unique type of sushi from Kochi Prefecture that has two different variations depending on the region. In the central area of the prefecture, people enjoy "Itakobuzushi," which is sushi made by wrapping vinegared rice with thin, white strips of special kelp. On the other hand, in the western part of the prefecture, "Kurokobuzushi" is more popular, which features dark kelp wrapped around the rice, offering a stark contrast in appearance.
Both types are traditionally served on special occasions such as weddings, funerals, and festivals. Historically, the whitish kelp used for Itakobuzushi was considered a luxury and harder to obtain, leading to the difference in food culture between regions. A notable feature of Kobuzushi is its simplicity—unlike typical sushi rolls, it doesn’t contain a filling in the center.
