Hoba Sushi (朴葉寿司, Hoba sushi) is a traditional dish from Gifu Prefecture, where sushi rice is wrapped in fragrant magnolia leaves. These leaves are believed to have antibacterial properties and allow for easy, mess-free eating. Originally, this dish was created as a portable meal for farmers and workers in the mountains.
Letting it rest for half a day allows the leaf's aroma to infuse into the sushi, enhancing its flavor. There are two styles—ingredients can either be placed on top of the rice or mixed into it. The choice of toppings varies by region, offering a delightful variety of flavors to explore.
