About Kaki no Ha Sushi
Kaki no Ha Sushi (柿の葉すし, Kaki no ha sushi) is a traditional delicacy from Nara. It features bite-sized portions of vinegared rice topped with slices of mackerel or salmon, neatly wrapped in persimmon leaves and gently pressed to form the sushi.
Persimmon leaves are rich in tannins, vitamins, and antioxidants, well-known for their antibacterial properties. In fact, the stems of persimmons are even used in traditional Chinese medicine for their beneficial qualities. These leaves not only prevent the sushi rice from drying out but also enhance its preservation.
The mackerel and other blue-skinned fish used in this sushi are known to help lower cholesterol and prevent arteriosclerosis, while the vinegar in the sushi rice offers widely recognized health benefits. Kaki no Ha Sushi is both a flavorful and nourishing way to experience Nara’s culinary heritage.
