In Hokkaido, which boasts the highest quantity of kelp production in Japan, is rooted in kombu rolls of fish such as salmon and herring. For kombu-maki, Hidaka kelp is often used, which is soft, with less fiber taken in the Hidaka region. Today it is made throughout the country and is often eaten in New Year's osechi dishes.
