Hiyashi ramen introduction

It was born to survive the hot summer in Yamagata. It is a cold ramen that originated in Yamagata City. As its name suggests, it is cold ramen, and both soup and noodles are cold, and sometimes ice floats. Unlike cold Chinese noodles, noodles are soaked in plenty of soup just like regular ramen. Soups have a common soy sauce taste, and not as sour as chilled Chinese. It is said that the first owner of Sakaeya Honten ramen shop in Honmachi, Yamagata Prefecture started its development with the desire of regular customers to eat cold ramen in summer and completed it in 1952 after trial and error. Yamagata ramen has an overwhelming amount of soy sauce taste, and most of Yamagata's chilled ramen has soy sauce flavor as well. Yamagata Prefecture's hiyashi ramen is well known, but there are also “hiyashi ramen” invented in other areas.
