Toriten introduction

Toriten is a local dish loved since ancient times in Oita. It is a dish that uses ponzu or soy sauce base to tempura chicken with a firm base and topped with the specialty sauce of the shop. Toriten is said to be the origin of Toyoken, the first restaurant in Beppu City. In the early Showa period, because the existing menu was boned, it was thought that it would be difficult for women to eat, so it began to cut the bones of thighs into easy-to-eat sizes and arrange them in a tempura style. It is said that it can be cooked faster than karaage, and its crispy and soft batter became popular again, and over time, various restaurants began to offer “toriten”.
