Goshiki Somen introduction
Goshiki Somen (五色そうめん, Goshiki somen) is a beloved specialty of Matsuyama, enjoyed since the Edo period. Made with carefully selected wheat flour and crafted by hand-stretching, these noodles are firm and flavorful. Without using any artificial coloring, the five colors—white, and delicate shades of tea (brown), matcha (green), plum (red), and mikan (yellow)—are achieved by kneading natural ingredients like barley, green tea, plum, and mandarin orange into the dough. Their vibrant appearance makes them not only delicious but also popular as a thoughtful gift.
