Shizuoka is renowned as a premier region for eel farming. Its warm climate throughout the year and abundant fresh groundwater make it the ideal environment for raising eels, with Lake Hamana at the heart of this tradition. Hamamatsu City, in particular, is home to many long-standing eel specialty restaurants, some with over 100 years of history. Here, you can choose between two styles of Unaju (うな重): the Kansai-style, which features eels cooked open-belly and grilled to a crispy finish with a sweet soy-based sauce, or the Kanto-style, where the eels are split open from the back, steamed to tender perfection, and coated with a lighter-flavored sauce. In Shizuoka, you can savor the best of both worlds.
