The Meiji Gobo Burger is a unique creation made with an abundant use of "Meiji Gobo," a specialty of Ibara City. This burger stands out for its satisfyingly crisp texture and the distinct burdock root aroma that lingers pleasantly after each bite.
"Meiji Gobo" refers to burdock root cultivated in the Meiji area of Yoshii Town, Ibara City, Okayama Prefecture. Locally, "gobo" is affectionately called "gombo." Unlike the common burdock grown in sandy soil, this variety is nurtured in red clay soil, giving it a thicker, softer texture with less bitterness and a richer, more pronounced burdock flavor.
