Iya soba (soba kiri) is a thick soba made using traditional buckwheat flour that has been introduced from ancient times in the Iya region, which is a hidden village of Heike Ochijin. It has a high percentage of buckwheat flour and has a high aroma, and is easy to cut.
It has a deep taste that is not found in common soba, and since ancient times, it has been indispensable as a feast dish in the Iya region (because it is easy to cut, so it does not serve only for wedding feasts as' edge is cut ').
