Iya Soba (Soba Kiri, 祖谷そば) is a thick-cut soba noodle dish made with heirloom buckwheat flour, passed down through generations in the Iya region, a remote area known as a refuge for the Heike clan in ancient times.

This soba stands out for its high buckwheat flour content, delivering a rich aroma and a unique texture that makes it prone to breaking into shorter pieces. Its robust and deep flavor, distinct from ordinary soba, has made it an essential dish for celebratory occasions in the Iya region. Due to its tendency to break, symbolically suggesting "cutting ties," it is traditionally avoided in wedding feasts.
