Red Snow Crab (紅ズワイガニ, Beni Zuwai Gani) is a prized delicacy found in the depths of Toyama Bay, around 1,000 meters below the surface.
This exquisite crab is unique to Toyama Bay, with no other fishing grounds for Red Snow Crab elsewhere. Freshly caught crabs are traded directly in local markets, adding to their exclusivity. Mature Red Snow Crabs are characterized by their wider claws and sturdy shells, but their slow growth process can take over nine years to fully mature.
A specialized fishing method called "Crab Basket Rope Fishing," developed by the fishermen of Uozu, is used to catch these crabs during the fishing season from September to May. To ensure ultimate freshness, restaurants keep the crabs alive in tanks or serve them freshly boiled. Additionally, places like Shinminato have embraced the branding of "Hiru Seri" and "Koshi no Benigani" to preserve and promote the culinary heritage associated with this crab.
