Red snow crabs that live in Toyama Bay can be caught at a depth of around 1,000 meters.
There are no red snow crab fishing grounds outside of Toyama Bay, and freshly picked red snow crabs are traded in the market.
When red snow crab matures, the scissors are wider and the shell becomes hard. However, it takes time to grow, and it can take 9 years or more.
The fishing method is the “crab cage fishing method” devised by fishermen in Uozu, and it is carried out from September to May.
In addition, restaurants maintain freshness by putting them in cages or boiling them, and in Shinminato, initiatives as food culture are also being carried out, such as promoting the branding of “daytime persimmons” and “Koshi's red crab.”
Since fishery resources are also being protected, red snow crab is one of the valuable ingredients.
