Squid Patties (イカメンチ, Ikamenchi) is a traditional home-style dish from the Tsugaru region. It originated from the practice of using squid “tentacles” (leftover from preparing sashimi) by finely mincing them, mixing them with vegetables like onions and carrots, binding them with flour, and deep-frying into golden, flavorful patties.

According to one theory, this dish was created during the post-war food shortage in Japan as a resourceful way to use up every part of the squid and repurpose vegetable scraps into something delicious. The savory umami of the squid, the slightly chewy texture of the meat, the natural sweetness of the vegetables, and the crispy outer layer come together to make Squid Patties a classic comfort food that remains a favorite among both children and adults.

Typically prepared at home, each family has their own version of the recipe, and some prefer to pan-fry them instead of deep-frying. Today, Squid Patties are also commonly found at local markets and grocery store delis at an affordable price, making them a casual meal option similar to fast food.
