“Bamboo chikuwa” is one of Tokushima Prefecture's soul foods.
What's the difference between a normal chikuwa and a normal chikuwa? In other words, they are sold with the bamboo stuck in it.
The citizens of Tokushima prefecture who have become accustomed to this feel that something is unsatisfactory about chikuwa not stuck in bamboo.
The basic thing to do is to hold the bamboo sticking out little bit with both hands and stick it on like bone-in meat.
I also recommend squeezing sudachi or eating it with sudachi soy sauce.

Incidentally, if you trace the origin of this bamboo chikuwa, it was around the Genpei Yashima Battle at the end of the Heian period.
It is said that it began when fishermen in Komatsushima City kneaded the flesh of small fish freshly caught on the coast, wrapped it around green bamboo, grilled it, and ate it.
