About Sasakama (Bamboo-leaf-shaped grilled fish cake)
Today, kamaboko generally refers to steamed fish cake with a half-cylinder shape. Sasakama, by contrast, is grilled fish cake shaped like a bamboo leaf. Carefully kneading the fish paste in a stone mortar and grilling it slowly gives sasakama a firm texture and a rich, deeply savory flavor.
