About Bibi Aji
Bibi Aji (美々鯵, Bibi aji) is a distinctive brand of horse mackerel caught in the natural and sunny region of Meitsu Port in Nichinan, Miyazaki Prefecture. The area enjoys a warm climate and abundant sunshine throughout the year, creating the perfect conditions for this special catch.
To earn the prestigious name of "Meitsu Bibi Aji," the fish must meet five stringent quality standards: 1) It must be caught using fixed nets and unloaded at Meitsu Port; 2) It must be caught by vessels affiliated with the "Meitsu Fish Branding Promotion Council"; 3) The fish must undergo meticulous freshness management; 4) Each fish must weigh at least 90g; and 5) It must be harvested between March and June.
After being caught using fixed nets, the fish are promptly chilled to near 0°C on-board with UV-sterilized seawater. Each Bibi Aji is then carefully hand-selected and maintained at a strict temperature of 5–10°C until shipment. This meticulous handling preserves the fish's natural umami, resulting in exceptionally fresh and flavorful horse mackerel.
