About Kurobuta Shabu-Shabu
Kurobuta Shabu-Shabu (黒豚しゃぶしゃぶ) is a traditional dish from Kagoshima Prefecture, featuring thinly sliced "Kagoshima Kurobuta" pork, a renowned local breed. Slices are delicately dipped into a pot of hot water, briefly cooked, and then enjoyed with a tangy ponzu sauce or other condiments.
While there are many dishes made with Kagoshima Kurobuta, this breed's tender meat, rich umami flavor, and high melting point of its fat make it perfect for shabu-shabu. Kagoshima Kurobuta boasts a history of over 400 years and is raised in the region's abundant nature on a diet rich in sweet potatoes. This process results in meat that is tender, easy to bite through, and exceptionally flavorful, earning high praise both inside and outside the region.
