Bamboo Shoot Soup (たけのこ汁, Takenoko-jiru) is a regional specialty from Aomori Prefecture. Unlike the thick and large moso bamboo shoots, Aomori’s soup features slender varieties like nemagari-dake bamboo shoots. This comforting soup is made by preparing a stock and adding bamboo shoots along with ingredients like tofu, wakame seaweed, and canned mackerel. It is then seasoned with miso for a rich and flavorful dish.
