About Takenoko soup
It is a local dish of Aomori Prefecture in a soup made with bamboo mushrooms. The bamboo shoots that can be harvested in Aomori are not thick and large mousuchik, but small bamboo shoots such as nemagaridake. This type of bamboo shoots is used for “bamboo shoot soup”. Take the dashi and add some of your favorite ingredients such as bamboo shoots, tofu, wakame, and mackerel boiled in water.
