About Zaru Tofu

Zaru Tofu (ざる豆腐, zaru tōfu) is a traditional specialty from Karatsu City, Saga Prefecture, crafted by the renowned Kawashima Tofu Shop, which has been in operation since the Edo Period. Founded during the Kansei era (1789–1801), the shop holds a prestigious history of presenting its tofu to the Karatsu domain lords. The ninth-generation owner perfected a method that preserves the natural flavor of soybeans without rinsing them in water, ultimately resulting in the creation of Zaru Tofu. This method produces tofu with a creamy, cheese-like texture and a rich, full-bodied taste, earning widespread acclaim beyond the local region.

The main ingredient, soybeans, is highly valued for its exceptional nutritional benefits. It is particularly rich in protein, which is essential for maintaining muscle and organ health. Soybeans also contain calcium, making them an ideal food for children in their growing years as well as older adults concerned about osteoporosis. Additionally, they are a great source of dietary fiber and isoflavones, which support gut health and help balance hormones.

Zaru Tofu can be enjoyed in its pure, unadorned form, but combining it with soy sauce or condiments enhances its flavor even further. Its smooth texture and delicate umami also make it a perfect pairing with sake. Specifically, clean and crisp varieties of sake, such as junmai or ginjo, wonderfully complement the richness of Zaru Tofu.

In Saga Prefecture, there are many restaurants and shops where Zaru Tofu is freshly prepared and served, making it a popular choice among visitors. Notably, “Tofu Cuisine Kawashima” in Karatsu is lauded for offering freshly made Zaru Tofu that’s second to none. Be sure to visit Saga and experience the perfect harmony of authentic Zaru Tofu and premium sake for yourself!
