About Wakayama Ramen
Wakayama Ramen (和歌山ラーメン, Wakayama ramen) has become one of the signature tastes of Wakayama Prefecture, often referred to locally as "chūka soba" (Chinese-style noodles).
Its soup base is typically categorized into three main types: soy sauce, soy sauce pork bone broth, and others like chicken or seafood-based broths. Regardless of the base, the noodles are slightly thin and straight, while the toppings are kept simple with slices of tender chashu pork, kamaboko (fish cake), bamboo shoots, and green onions. This straightforward combination perfectly suits its humble and nostalgic name of "chūka soba," offering a comforting, unpretentious flavor that warms the soul.
