About Kazuno Horumon

Kazuno Horumon (鹿角ホルモン), a specialty of Kazuno City in Akita Prefecture, is a dish featuring pork and beef offal marinated in a sweet and savory miso-based sauce. This unique dish is prepared using a "Jingisukan" grill pan to simultaneously grill and simmer the meat together with cabbage and tofu. Its origins date back to the post-war era during a time of scarce food supplies, when miners sought out this inexpensive yet nutritious meal. Over time, it became a beloved local dish.

The main ingredients in Kazuno Horumon include pork or beef offal, cabbage, and tofu. Offal is rich in protein, B vitamins, and iron, making it an excellent energy booster. Cabbage and tofu add additional vitamins and minerals, creating a well-balanced meal packed with nutrients.

During cooking, the offal is placed on the hot grill pan and generously topped with cabbage before being covered with a lid. The steam from the cabbage mixes with the flavorful juices from the meat to create a rich and savory broth. The characteristic cooking method, known as "niyaki" (grill-simmering), involves spooning this broth over the ingredients to meld the flavors together. The umami-packed broth also infuses the firm cotton tofu placed around the edges of the pan, resulting in a dish that pairs perfectly with plain white rice or a refreshing beer.

For those who enjoy sake, Kazuno Horumon is an excellent match with full-bodied junmai sake or light, aromatic ginjo sake. The rich flavors of the dish harmonize beautifully with the nuanced notes of sake, enhancing the dining experience.

Kazuno Horumon is a cherished everyday dish for the locals, enjoyed at home or in restaurants alike. Its distinctive cooking style and rich flavors embody the essence of Kazuno's culinary culture, making it a must-try for anyone exploring Akita’s regional cuisine.
