About Mimiga

Mimiga (ミミガー, Mimiga) is a traditional delicacy from Okinawa, made from pig’s ears. Known for its unique, crunchy texture, the dish gets its name from the Okinawan word for “ear.” In Okinawan cuisine, every part of the pig is put to good use, and pig’s ears have become a cherished local food staple.

To prepare Mimiga, the ears are first singed over an open flame to remove any hair, then boiled or steamed before being thinly sliced.
