About Seared Bonito
Makurazaki City, located at the southernmost tip of the Satsuma Peninsula, is a town blessed with abundant natural beauty. Nutrient-rich waters flow from the sources deep within Mount Kurata, carrying forest-derived nourishment into the East China Sea. This natural cycle supports a thriving marine ecosystem: plants feed plankton, which are eaten by small fish, and then by larger fish, ultimately leading to the production of delicious bonito.
The bonito used for sashimi or seared dishes, such as "tataki," is caught using traditional single-line fishing methods. The fish is flash-frozen onboard while still fresh and stored at -50°C to preserve its peak freshness. It is then brought to Makurazaki Port, delivering the taste of the ocean directly to your table.
