Soba Grain Zosui
A unique dish featuring whole buckwheat grains
About Soba Grain Zosui
Soba Grain Zosui (そば米雑炊, soba kome zousui) is a traditional dish from the Iya region. Surrounded by steep mountains, the Iya area couldn’t cultivate rice, so buckwheat became a staple crop instead.
"Soba grain" refers to buckwheat seeds that are boiled with salt, hulled, and dried. It’s said that the origins of Soba Grain Zosui date back to the Heike clan refugees who fled to this region after their defeat in the Genpei War. Longing for their capital, they created this dish as a ceremonial New Year's meal.
