About Shikishiki
Shikishiki (しきしき, Shikishiki) is a traditional snack beloved in the areas of Katsuragi-Taima and Shinjou in Nara Prefecture. It’s a crepe-like delicacy made by mixing locally grown wheat and sugar—cultivated on repurposed fallow land—with eggs, then spreading the batter thinly, folding it like a crepe, and cooking it on a frying pan. Back in the day, when eggs were considered a luxury, water was used instead.
Nara Prefecture has a rich history of wheat cultivation, leading to the creation of many wheat-based foods and snacks such as Miwa somen noodles, hankachou mochi rice cakes, and Shikishiki. This special snack can be enjoyed any time of year.
Shikishiki can be eaten sweetened as is, topped with chopped green onions and bonito flakes while fresh off the pan, or wrapped around sweet red bean paste. Every household has its own favorite style of preparation, making it a truly versatile and cherished treat.
