The local gourmet “Kumagaya Horudon” from Kumagaya City, Saitama Prefecture, is an exquisite yaki-udon that combines chewy udon made from locally grown wheat with fresh pork hormones. Kumagaya City is one of the nation's leading wheat producing areas, and is characterized by udon with a chewy texture. Meanwhile, pork hormones are sent directly from slaughter facilities in the city, and their fresh, odorless flavor stands out.

The birth of this dish dates back to the “Kumagaya B-grade Gourmet Championship” held in 2010. It was held for the purpose of creating new specialties that make use of local restaurants and ingredients, and “Kumagaya Hordon” received the Grand Prix from many applications. After that, it was established as a B-grade gourmet in Kumagaya City, and now it is offered at many stores.

The seasoning adds a spicy accent to the soy sauce base, and is finished so that it is exquisitely intertwined with the umami of hormones. It also uses plenty of local vegetables such as cabbage and green onions, and has an excellent nutritional balance. In particular, pork hormones are rich in B vitamins, iron, and zinc, and are ideal for supplementing stamina.

Kumagaya Holdon goes well with sharp, dry sake. For example, junmaishu and ginjoshu made in Saitama prefecture are characterized by a clean mouthfeel and delicate acidity, which tightens the sweetness and umami of hormone fats, and further enhances meal satisfaction. Also, slightly aged junmai ginjoshu has a rich aroma and richness, and goes great with the sweet and spicy flavor based on soy sauce.

There are many restaurants serving “Kumagaya Holdon” in Kumagaya city, and you can enjoy it at popular restaurants such as “Kumagaya Holdon Honpo” and “Ajidokoro Kumagaya.” Also, at the “Kumagaya B-grade Gourmet Festival,” which is held every year, many stores offer this dish, and it is loved by tourists and locals.
