About Jindaiji Soba
Jindaiji Soba (深大寺そば, Jindaiji soba) originated in Chofu, Tokyo, where the land was unsuitable for rice cultivation but ideal for growing soba due to its well-drained soil and abundant spring water.
Although the soba fields disappeared in the 1960s, the number of soba restaurants in the area increased. While these restaurants source their soba from various regions, cultivation of Jindaiji-specific soba began at the Jindaiji Castle Ruins in the 1980s. Renowned for its exceptional flavor, this soba is truly a unique delicacy.
