About Hegi-soba

Hegi soba is a soba originated in the Uonuma region of Niigata Prefecture. It is a kiri-soba made with seaweed called nori (nori) on a bowl called hegi. By using the seaweed called “Funori” as a connection, the smooth throat and elastic texture are attractive. There is also a unique beauty in the soba that is served in a bite-sized bundle.
