Mizutaki Hot Pot (水炊き) is a traditional dish with over 100 years of history and a must-try specialty from Hakata.
As its name suggests, this hot pot starts with simmering bone-in chicken pieces in water. Green onions and your choice of vegetables are added, and the dish is enjoyed with a tangy ponzu sauce.
