Soba Rice Zosui (そば米雑炊, Soba kome zosui) is a traditional dish from the Iya region, known for its stunning mountainous terrain. Due to the area's high altitude and steep landscape, rice cultivation is challenging, so buckwheat became a staple crop.
Soba rice refers to buckwheat grains that are boiled with salt, shelled, and then dried. This dish is said to have its origins when the Heike clan, who fled to the remote Iya region after their defeat in the Genpei War, created this recipe as a way to capture the spirit of the festive dishes they enjoyed in the capital during the New Year.
