Tokushima Ramen (徳島ラーメン, Tokushima ramen) has become widely recognized as a beloved local specialty of Tokushima Prefecture in recent years. However, the term "Tokushima Ramen" itself only gained widespread usage after a Tokushima ramen shop was featured in the "Shin-Yokohama Ramen Museum" in 1998. Locally, it is still commonly referred to as "Chinese soba" or "Shina soba."
This ramen is characterized by its bold brown-toned soup made from a rich pork-bone base mixed with dark soy sauce, tender pork belly simmered in a sweet-savory glaze instead of traditional sliced chashu, and a raw egg topping instead of soft-boiled eggs. The portion size is slightly smaller compared to ramen in other areas, as it's typically enjoyed as a side dish accompanied by a bowl of rice, which is a common custom in Tokushima.
