Jusanko Shijimi Ramen
Ramen made with Japan's finest freshwater clams
About Jusanko Shijimi Ramen
Jusanko Shijimi Ramen (十三湖しじみラーメン) is a local specialty from Goshogawara City, located in the northwestern part of Aomori Prefecture. It features “Yamato Shijimi” clams harvested from Jusanko, a brackish lake where fresh and saltwater meet.
Renowned as some of the most delicious clams in Japan, Jusanko's plump and flavorful Yamato Shijimi provide a rich, savory essence. Their extract is blended into a creamy, white broth that is both deeply flavorful and full of umami. While each restaurant offers its own variation — ranging from lightly salted to subtly miso‑flavored — every bowl showcases the distinctive aroma and taste of these exceptional clams.
