About Kumamoto Ramen
Kumamoto Ramen (熊本ラーメン, Kumamoto ramen) originated as an evolution of tonkotsu ramen, which was first created in Kurume City, Fukuoka Prefecture. It made its way through Tamana City and eventually to Kumamoto City and its surrounding areas.
This ramen is distinct for its slightly thicker noodles compared to Tamana Ramen or Hakata Ramen (also known as Nagahama Ramen). Another defining feature is the addition of chicken broth to the creamy pork bone soup, giving it a richer, milder flavor. However, some shops stick to a purely pork-based broth, so you can experience a variety of flavors depending on where you try it.
