Wajima Fugu
Wajima City, Ishikawa: One of Japan's top producers of natural fugu
Wajima Fugu introduction
Wajima City in Ishikawa Prefecture is home to Wajima Port, one of the region's leading fishing ports that brings in a rich bounty of seafood from the Sea of Japan throughout the year. The Noto area sees a diverse catch of natural fugu (pufferfish), including tiger puffer, white-spotted puffer, black scraper, and more. Among these, the fugu caught at Wajima Port is known as "Wajima Fugu." Wajima City (Wajima Fugu) ranked first in Japan's natural fugu catch for five consecutive years starting in 2011. Although it briefly slipped to second place behind Hamada City in 2016, it regained the top spot in 2017 and remained number one in 2018. Local specialties include delicacies like Wajima Morning Market's famous "fugu himono" (dried pufferfish), as well as favorites like "fugu tataki" (lightly seared pufferfish) and "fugu karaage" (deep-fried pufferfish), making it easy to enjoy the unique flavor of fugu at home.
