Ebi Meshi (えびめし, shrimp fried rice) is a distinctive dish made with fried rice coated in a rich, savory sauce blending caramel sauce, ketchup, and aromatic spices. Originating in and around Okayama Prefecture, it is particularly celebrated as a local favorite in Okayama City. Recently, it has gained national attention through popular TV programs. The slightly sweet and smoky rice, infused with the rich sauce, pairs perfectly with the tender, springy texture of shrimp, making it irresistibly delicious. Its origins trace back to a curry shop named "Indeira" in Tokyo’s Shibuya district. A staff member from Okayama brought this recipe back to their hometown, where it grew into a beloved regional dish.
