The White Shrimp (白エビ, Shiroebi), a renowned seafood delicacy from Toyama Prefecture, is recognized alongside Firefly Squid and Yellowtail as one of "Toyama's prized fish."
Known for its natural sweetness and melt-in-your-mouth texture, White Shrimp has a tender shell that can be eaten whole, making it a nutrient-rich choice packed with calcium, potassium, and magnesium. These small shrimps, measuring around 5 to 8 cm, are found only in waters around Japan and spend their lives swimming in deep-sea environments between 100 and 500 meters. Their lifespan is around 2 to 2.5 years.
As a beloved local specialty, White Shrimp is enjoyed in various forms such as tempura, fried dishes, dashi broth, and sashimi. It has long been cherished by the people of Toyama.
