Ikashumai (Steamed Squid Dumplings) introduction
Ikashumai (いかしゅうまい, steamed squid dumplings) is a signature delicacy of Yobuko, Kyushu, and has become one of the region’s most popular souvenirs. This dish originated from the kitchen of the underwater restaurant Manbō, born from the idea of utilizing leftover squid without waste. Only the tender, premium upper meat of the squid is used, resulting in a soft, snow-like texture. It offers a unique way to enjoy the natural sweetness and umami of squid, distinct from the sashimi variety. The combination of the light, fluffy texture and the chewy, springy bite creates a truly satisfying eating experience. Manbō meticulously selects all the ingredients beyond squid. Locally grown sweet onions, freshly laid eggs from chickens raised on purely plant-based feed, and natural sea salt rich in nigari minerals are all incorporated to enhance the overall flavor and quality of these steamed dumplings.
