Ayu cuisine introduction

There are 585 clear streams flowing in Oita prefecture, such as the Mikuma River, which is the upstream of the main stream of the Chikugo River, a first-class river, and the Ono River, which is the largest river in the prefecture with a length of 107 km, and each one of them brought the blessings of the river to the region. Ayu, in particular, was prized as a valuable source of protein in mountainous areas. Ayu is a delicate fish and cannot live in dirty water. At the Hita Fishery Cooperative, sweetfish are raised by underground water and groundwater in a pond on a land blessed with nature called “Daisen”. We measure the degree of contamination of wastewater and call attention, and continue to explore sweetfish that are close to nature based on accumulated experience and research in various places.
