Shimizu Saba
Rich and fatty like toro - Winter’s Shimizu Saba
About Shimizu Saba
Shimizu Saba (清水サバ, Shimizu saba) refers to Goma Saba, a species of mackerel caught in Tosashimizu.
The fishing grounds off Cape Ashizuri are known for their strong currents and nutrient-rich waters, producing firm and flavorful mackerel throughout the year. Caught using the traditional single-hook fishing method and transported as live fish, Shimizu Saba is served at peak freshness.
The mackerel caught especially from autumn to winter is exceptionally delicious, boasting a rich taste comparable to premium toro (fatty tuna).
