Kakogawa Katsumeshi introduction

“Kakogawa Katsumeshi” is a local gourmet dish that continues to be loved mainly in Kakogawa City, Hyogo Prefecture. It was born in 1947, shortly after the war, in a cafeteria in front of Kakogawa Station, and has since become established as a specialty dish of Kakogawa. What is characteristic is the style where a flat beaten beef cutlet is finished with a demi-glace sauce-like sauce and placed on top of rice. One of the attractions of “katsumeshi” is the fusion of Western food and Japanese food, where you eat this combination of “rice and cutlet on a Western plate” with chopsticks. The appeal and evolution of katsumeshi is basically the traditional style of eating beef cutlets with demi-glace sauce, but recently, various variations such as pork cutlets, chicken cutlets, and shrimp cutlets have also appeared. Also, a special sauce for katsumeshi is commercially available for home use, and is incorporated into school lunches in Kakogawa City, making it a dish deeply rooted in the local community. The most important point of this dish is the demi-glace sauce style sauce. Each store has a different flavor, and each store is particular about the sweetness, spiciness and richness as “secret flavors.” Since it is easy to make at home, it is also loved as a local home-cooked dish. Traditions and new experiments rooted in the region Katsumeshi, which is served at over 100 restaurants in Kakogawa City, is treasured as a regional identity. Also, recently, new menus such as “katsumeshi burger” have appeared, and they have evolved while valuing local traditions.
