Jibu

Jibu introduction

Jibuni is one of the traditional dishes of Kanazawa, Ishikawa Prefecture, “Kaga cuisine”. You can confine the umami of meat by simmering duck meat with buckwheat flour or flour. Duck meat is covered with flour, so it is characterized by its thickening. In the past it was a winter dish, but now it can be eaten all year round by combining seasonal ingredients.
