Jibuni introduction
Jibuni (治部煮) is a beloved traditional dish from Kanazawa in Ishikawa Prefecture, part of the renowned Kaga cuisine. This dish features duck meat coated with buckwheat or wheat flour, simmered to lock in its rich flavor. The coating creates a distinct, slightly thickened texture that is characteristic of Jibuni. While it was originally enjoyed as a winter dish, Jibuni has evolved and can now be prepared with seasonal ingredients, making it cherished year-round.
