About Yubeshi
Yubeshi (ゆべし) is a traditional mochi-based confection made with the aromatic yuzu citrus from the local area. Originating in the Edo period, it is said that the ancestors of the Tenindo family once presented this delicacy, crafted with yuzu, to the feudal lord of Matsuyama.
The process involves mixing glutinous rice flour and regular rice flour with sugar, white miso, and fresh yuzu juice. This blend is delicately steamed to develop its unique texture, while the yuzu lends its characteristic aroma and flavor. Made without any additives, Yubeshi is painstakingly prepared using time-honored methods in Bitchu-Takahashi, Okayama Prefecture.
