“Small bream sparrow sushi” is a local sushi from Wakayama prefecture that has been eaten since ancient times, and is one of the famous souvenirs representing the prefecture. It is a sushi made by opening a small sea bream (chariko) of 6 to 7 cm, tightening it with vinegar, and putting it on sushi rice, and the shape held with the tail of a red sea bream attached is named because the cherry blossom color resembles a puffer sparrow. The sushi is arranged radially in an octagonal container, with five tails overlapping each other like petals in the center. It is an old-fashioned cooking method that enhances the sweetness of kodai by adding saltiness, and it does not come with soy sauce, and is eaten as it is.
