About Aso Takana Pickles
Aso Takana (阿蘇高菜, Aso Takana) is a traditional vegetable nurtured by the cool climate and volcanic soil of the Aso region. This mustard green, a variety of the Brassica family, is known for its slender stems, satisfying crunch, and unique spicy flavor. It is considered one of Japan’s three great pickled greens, alongside Hiroshima greens and Nozawana.
The hallmark of Aso Takana Pickles (阿蘇高菜漬け, Aso Takana-zuke) lies in their crisp texture and sharp, tangy spiciness. A beloved feature on dining tables and as a popular souvenir, these pickles come in two styles: “New Pickles” (浅漬け), which are lightly pickled and ready to enjoy after just three days, and aged “Old Pickles” (古漬け), fermented over six months to deliver a deeper, tangy, and spicy flavor profile.
