About Shiroishi Warm Noodles
Shiroishi Warm Noodles (白石温麺, Shiroishi Umen) are a unique local specialty produced in Shiroishi City, Miyagi Prefecture.
These noodles are distinctively short, measuring just 9 centimeters, and offer a texture unlike traditional somen. Slightly thicker than regular somen noodles, they allow you to fully enjoy their rich, wheat flavor. Unlike standard somen production, which uses edible oils to stretch the noodles and prevent drying, Shiroishi Warm Noodles are made without any oil.
This method dates back around 400 years when a devoted son, concerned about his father’s stomach illness, learned the recipe from a traveling monk. The noodles were lovingly crafted for his father and were named "Warm Noodles" (Umen) to honor the son’s warm and caring spirit.
