Zunda Mochi (ずんだ餅, Zunda mochi) is a delightful traditional sweet from Miyagi Prefecture. It’s made by boiling young green soybeans (edamame) before they mature into regular soybeans, then grinding them into a smooth paste mixed with sugar. This sweet, nutty paste is then generously coated over chewy rice cakes (mochi).
Originally created as a clever way to provide nourishment during the hot summer months when appetites tend to diminish, Zunda Mochi has been a beloved family food in the region for generations.
