About Dodomese
Dodomese (どどめせ) is a traditional dish originating from the Fukuoka area of Setouchi City in Okayama Prefecture.
It resembles a luxurious takikomi gohan, or seasoned mixed rice, made with a variety of rich ingredients. However, its most unique feature is the addition of vinegar, which gives it a distinctive flavor.
During the late Kamakura period, the Fukuoka area served as a port for takasebune (shallow-draft transport boats). It’s said that the dish came about when boatmen mixed soured unrefined sake, known as doburoku, into their seasoned rice, creating a tangy and delicious meal that quickly gained popularity.
The name "Dodomese" is believed to have evolved from "Doburoku Meshi," or "sake rice."
