Iga Beef (伊賀牛, Iga gyu) is a prestigious cattle breed raised in the Iga region of Mie Prefecture. Classified as Japanese Black Wagyu, it is also regarded as the foundation breed of the famous Omi Beef.
What sets it apart is the unique farming method that prioritizes natural and healthy growth, rather than actively pursuing high marbling. These cattle are raised in a stress-free environment, resulting in beef with a natural sweetness, rich umami, and a buttery tenderness that competes with even heavily marbled varieties.
