One of the most unique features of Shizuoka Oden (静岡おでん, Shizuoka oden) is its jet-black broth and skewered ingredients.
The distinct dark color of the broth comes from the time-honored tradition of continuously adding to the secret soup base in each shop over the years. The broth is made by simmering beef tendon stock with rich soy sauce, creating a deeply flavored black soup. It's served with skewered morsels, topped with sprinkles of bonito flakes and aonori (green seaweed powder)—a signature Shizuoka touch.
